2005 Dylan David - Estate Library
Library Wine - Limited Quantity Available
This is a wine of firm structure that's fruit forward, balanced, fragrant and flavorful. The aroma is intricate with notes of back cherry, plum, flowers, black pepper, cinnamon/nutmeg, and brown spice accented by light cedar, hint of smoke and slight vanilla. It is a wine with a soft "sweet" entry, fine tannin structure and lush texture. It's flavors are predominantly berry, plum, black pepper with a lingering finish of black cherry.
The 2005 growing season started with bud break in mid-March. The season continued with cool temperatures and unseasonable rain through early June. A mix of foggy mornings and warm afternoons prevailed throughout the summer that produced grapes with concentrated flavors of black cherry and spice.
